Hearty Oatmeal with Plums and Toasted Coconut 🥥 OK this recipe slapped! We're weaning our son off bottles (crazy we're at this stage already 😭) and this was the perfect healthy replacement for his morning bottle. We chose this recipe because every ingredient in this bowl serves a purpose ✨ The oats are packed with iron, fiber, and complex carbs that provide lasting energy and support healthy digestion. The plums add a boost of antioxidants and vitamin C (also helps with iron absorption), while naturally sweetening the oatmeal without any added sugar. The toasted coconut brings a subtle nutty flavor and adds healthy fats and fiber, making the whole bowl feel a little more special :) This hearty combo was the perfect way to ease him into a new breakfast routine! 💛

This recipe is nut free and vegetarian and is easy to make dairy free, gluten free, and vegan.

Suggested age for this recipe: 12 months and up

Ingredients

Makes 22 (2-ounce) servings. We're big on batch prepping and freeze individual portions in these space-saving silicone molds!

 

  • 3 cups water

  • 3 cups dairy or non-dairy milk

  • 1.5 cups steel-cut oats (or gluten free if desired)

  • 3/4 cup chopped plum

  • Unsweetened shredded coconut flakes for topping

Instructions

  1. Boil the water and milk in a pot

  2. While waiting for the water and milk to boil, wash and chop up the plums

    • Note: we chopped them pretty small (almost diced them) so it would be easier for our son to chew.

  3. Once the water and milk are boiling, add the steel-cut oats and plum to the pot ("the oatmeal"). Turn the heat down and simmer covered, for 30-35 minutes, until oats are soft.

  4. While the oatmeal is cooking, toast the coconut over a pan until browned.

    • Note: Toasting the coconut only took us about 20-30 seconds, over medium heat.

  5. Top the oatmeal with toasted coconut before serving, mix together, and enjoy! :)

    • Note: If you want it more liquid-y, you can add more milk

 

TIPS ⬇️

  • The oatmeal (without the coconut topping) can be stored in the fridge for up to 3 days and freezer for up to a month

  • Store the toasted coconut in an airtight container in your fridge for up to a week
