Vegan Baby Finger Food: Zucchini Pizza Bites Recipe
These were sooo good! Our son has a cow's milk protein allergy so we made this using vegan cheese, but you can definitely put mozzarella on it and it would be bangin! They tasted just like little pizzas but healthier 😋
We did find our son was having some trouble chewing the zucchini. We thought it was the cheese at first but realized it's actually the zucchini! The zucchini is a little stringy so if your baby is struggling with it try cutting it into even smaller pieces.

Ingredients
This made a whole tray of vegan zucchini pizza bites!
2 tablespoons olive oil
1 small zucchini, cut into 1/4 inch thick rounds
1 cup canned crushed tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
Handful of vegan cheese for sprinkling on top
Instructions
Preheat the boiler. Line a baking sheet with parchment paper
Sauté the zucchini in a pan with olive oil for about 5 minutes. Place the zucchini on the prepared baking sheet.
In a bowl, mix the tomatoes, garlic powder, and oregano together with a spoon. Spoon some on top of each zucchini round. Sprinkle cheese on top of each zucchini round to your liking
Broil in the oven until the cheese melts, for about 5 minutes. Store in the fridge for up to 3 days or freezer for up to a month.
