Mini Garden Bites: Healthy Veggie Cakes for Babies and Toddlers 🫛

These SLAPPED! Our son likes peas so he really enjoyed this. They paired perfectly with an avocado mash. We ate some ourself and added salt and red pepper flakes - they were sooo yummy. 10/10 recommend!

This recipe is dairy free and nut free, and gluten free if you use oat flour.

Ingredients

Makes a whole tray of 1 inch patties plus two 3 inch-ish patties for the adults 😂

  • 4 tablespoons ground flaxseed

  • 2 cups frozen peas

  • 2 eggs, beaten

  • 2 teaspoons whole wheat flour or oat flour

  • 2 teaspoons minced fresh basil

  • 1 teaspoon onion powder

  • Handful of baby spinach

 

Instructions

  1. Preheat the boiler. Line a baking tray with parchment paper

  2. Steam the frozen peas in a steamer over boiling water for 5 minutes (other methods of steaming are fine too)

  3. Chop the baby spinach first and then sauté it in a pan with olive oil

  4. Mix the eggs, sautéed spinach, flaxseed, flour, basil, and onion powder in a bowl ("egg mixture")

  5. Mash the steamed peas in a bowl

    • Highly recommend using a masher for this, it was SO tiring doing this with a fork 😅

  6. Combine the mashed peas with the egg mixture. Mix with a spoon. Create 1 inch small patties and lay them out on the prepared tray

  7. Broil until golden brown, about 6-8 minutes one side. Take them out and flip them over and then broil for 1-2 minutes.  Store in the fridge for up to 3 days or freezer up to a month.

    • We prefer them to be softer so it's easier to chew, but if you want them crunchier you can leave them broiling for longer. We just made sure the internal temp of the patties were over 165 Degrees Fahrenheit
